Quinoa Avocado Power Bowl


We love this bowl because it is quick and simple to make, packed with colorful antioxidant power, easy to make in bulk for lunches throughout the week, and delicious!

Make it yours by subbing out whatever lettuce, grains, veggies, fruits and nuts you have on hand. Nourishment does not need to come in the form of a hard-to-follow recipe. On the contrary, some of our favorite meals are a hodge podge of what's left in our fridge... or our kiddos plates.

Fuel up and go get 'em mama!

quinoa avocado power bowl


  • 1 cup cooked quinoa
  • 4 cups arugula
  • 1/2 avocado
  • 4 Tbsp dried cranberries
  • 1 cup diced apple
  • 4 Tbsp walnuts
  • 1 cup shredded carrots
  • sprinkle hemp seeds


  • 2 Tbsp balsamic vinegar
  • 1 Tbsp olive oil
  • 2 Tbsp garlic hummus


  1. Divide all ingredients for the bowl into two dishes, or Tupperware if making ahead of time.
  2. For the dressing, combine all ingredients into a jar with a tight fitting lid (like a mason jar) and shake well until mixed.
  3. Dress right before serving.

Note: Sub out whatever grains, lettuce, fruits, veggies, nuts, seeds and hummus you have on hand. Eating healthy isn't supposed to be hard. Make it easy on yourself and enjoy!
