Oh yes, we blended up beets and avocados, and we had zero regrets. Don't knock it 'til you try it! 

Beet Avocado Smoothie


  • 1 cup plain, Greek yogurt (ideally Organic, full fat)
  • 1/2 avocado
  • 1 banana, frozen 
  • 1 medium beetroot (pre-cooked & peeled)*
  • 1 cup beet greens (or sub spinach, kale or other darky leafy green) 

If you want to get fancy, add a tsp of vanilla extract and another tsp of maple syrup. These additions are optional, but delicious. 


Blend and enjoy!

*Batch cook beets in advance: One of the easiest ways to do this is to boil beets in a pot of water. No need to peel them. Just plop them in the pot of water, making sure they're at least 90% submerged. Cook until tender when stabbed with a fork (this takes about 20-30 minutes, depending on the size of your beets). Once tender, drain off the hot water and run cooked beets under super cold water. Using your hands, you'll see that the skin now peels right off.
