Broccoli Cheddar Egg Casserole

Broccoli Cheddar Egg Casserole

Ingredients

  • 12 eggs
  • 1/2 cup almond milk
  • 1 cup organic cheddar cheese, grated
  • 2 large heads broccoli (6 cups small chopped florets)
  • 1 yellow onion, chopped
  • 1/2 cup green onion, chopped
  • 2 cloves garlic, minced
  • 1 Tbsp olive oil
  • salt & pepper to taste

Preparation

  1. Preheat oven to 350 degrees F.
  2. Whisk together eggs, almond milk and liberal salt & pepper.
  3. Saute garlic and yellow onion in olive oil on stove-top, over medium-high heat. Add broccoli florets and continue to cook, just until they start to turn bright green. Add salt and pepper to veggies to taste.
  4. Stir sauteed veggies, green onion and cheddar cheese into egg mixture.
  5. Rub rectangular baking dish with olive oil or grass-fed butter. Pour egg mixture into baking dish (exact size of baking dish does not make a big difference here).
  6. Bake for ~45 minutes, or until knife inserted comes out clean. Let cool and cut into 8 pieces.
