Blood Orange Salad
Citrus season is in full swing and I am loving it! I can’t help but obsess over blood oranges and their beautiful color. The deep red makes them perfect for serving with your Valentine’s Day meal. This salad is simple and serves two. Make it a nourishing date night in with your loved one.
Blood Orange Salad
3 small blood oranges
1/4 cup shredded carrots
3 cups mixed greens
1 oz manchego cheese
1/2 tsp black sesame seeds
1 Tbsp olive oil
1 tsp honey
Slice 2 blood oranges into rounds and peel off rinds. Reserve 1 blood orange to juice for dressing.
Whisk together dressing with 2 Tbsp blood orange juice, olive oil, honey and salt to taste.
Plate two salads each with 1.5 cups mixed greens and 1/8 cup shredded carrots. Drizzle half of dressing over each salad. Top each with orange rounds, shredded manchego cheese and a sprinkle of black sesame seeds.
